Recipe: classic chai tea

So far I only knew chai as a chai latte, which is offered in caf├ęs. But mostly only a chai powder mixture is used there, which is mixed with the classic chai preparation has little to do. So how can you still conjure up chai tea?

The Indians drink their chai tea at any time of the day, preferably strong, sweet and creamy - like Masala Chai. The designationChaiis thisHindi word for tea andMasala means translatedSpices.In addition to the spices, there is also a strong black tea (e.g. Assam), milk and sugar.

How do you get a classic Indian chai tea?

There is no fixed recipe for Masala Chai, almost every family has its own own mix of spices made from cardamom, cloves, fennel seeds, anise, ginger and cinnamon. According to Ayurveda doctrine, this spice combination has one stimulating effect. You can use these quantities as a guide and try something out:

Ingredients for one serving

  • 300ml milk
  • 2 cardamom pods
  • 2 cloves
  • 5 g ginger
  • 2 peppercorns
  • 1 teaspoon of sugar
  • 1/2 cinnamon stick
  • 3 - 4 g black tea (well suited: Ceylon Assam)

That's how it's done

Bring the milk, sugar and spices to the boil briefly in a saucepan and simmer on low heat for over a minute, then add the tea. Now let everything stand for about ten minutes, pour through a sieve and serve.

In order to get the chai tea typically creamy, you scoop it up several times with a ladle and pour it back into the pot, which leads air into the chai - just like frothing milk.
